Terroir: Grenache, Syrah on sandy clay at the foot of the village of Séguret. Vines between 30 and 80 years old.
Vinification: Manual harvesting between mid-September and early October. Harvest mainly destemmed and lightly crushed. Gravity vatting. Separate Grenache & Syrah vinification, with fine extraction at the start of fermentation, followed by a long vatting period in infusion with daily manual wetting.
Aging: 12 months, separately for greater precision the first winter, Syrah in old 228L barrels, Grenache in Foudre, then 8 months blended in uncoated concrete.
Tasting: A deep garnet-red colour. A nose of fresh fruit coulis and violets. Fresh, juicy and energetic on the palate, with fine, tightly-knit tannins. Despite being in the minority, the Syrah still dominates the aromas.
Serving suggestion: Serve at 16-18°C in large glasses. This is a wine that will go well with bistro cuisine, canaille dishes, entrecôte steak, grilled meats and various roasts. It also goes well with chocolate and red fruit desserts.
