Gouverneur Saint-Auban Blanc

Aging: 12 months on fine lees (barrels).

Tasting: Bright, luminous pale yellow color. Yellow fruit, white flowers and brioche notes make up an intense, beautifully mature nose. The palate shows a real balance between fullness and freshness, appearing at once intense, delicate, silky and long on apricot, peach, acacia flowers and sweet spices. The lingering finish prolongs the pleasure.

Serving suggestion: Food pairings: truffle brouillade, scallops with sesame and lavender honey, Beaufort, omelette baveuse, poultry supreme with cream and chanterelles.
